An example: I knew an excellent French waiter who was born and raised in Burgundy. He loved Burgundy but had a great disdain for Bordeaux wine. He refused to recommend Bordeaux to clients. He dismissed all Bordeaux wines—including the Premiere Grand Cru chateaux--with scorn.

Now Burgundy with its great Pinot Noir based red wine is profoundly different from Bordeaux wine which is principally Cabernet Sauvignon and blended with smaller quantities of Cabernet Franc, Merlot, Malbec, and Petit Verdot. Apples and oranges! I pressed this waiter on his disdain for Bordeaux. He was rigid and could not be moved. I became suspicious when he refused to name a particular chateau which he found lacking. In a fit of pique, he hinted at his secret when he said: “I do not drink piss!”
